Provide 3 health benefits of following a plant-based diet versus the currently high animal based diet that is generally followed. Other than health benefits, what can be other benefits of following a plant-based diet?

A plant-based diet is much more beneficial than the high animal-based diet. Not only in terms of wellness but also in terms of sustainability and other environmental issues.
Many diseases can be avoided only based on our food diet. It is more than proved that high blood pressure, for example, is one the major responsible for deaths worldwide. A plant-based diet can low your blood pressure, keep your heart healthier and prevent diabetes. On the other hand, an animal-based diet makes you ingest much more saturated fat which is one of the biggest causes of heart diseases.
Thinking about the environment, raising animals is much more detrimental for our planet than growing plants. The ruminant livestock alone is the major contributor to CO2 emissions in the world (62%), while the whole agricultural sector is responsible for 25% of all greenhouse gas emissions. Regarding global warming alone, going green is definitely the right thing to do.
Deforestation is another important environmental issue. Cattle are the biggest reason why Amazon forest has been deforested. According to the Yale School Environment, the cattle alone is responsible for 80% of current deforestation rates. Brazil is the largest meat exporter in the world and home about 200 million head of cattle.
In your future culinary profession, can you see yourself incorporating plant-based foods in your menus? Why or Why not?
As an aspiring cook, I believe health always has to come first. The main purpose of food is to keep our body moving the best way possible. To make that happen, we must ingest nutrients and water. In my opinion, it is worthless eating if we do not get all the energy necessary to keep the human body machine running. In my former restaurant in São Paulo, we followed the trend “Meat Free Monday”, and we always used to offer a plant-based dish daily. So, this concern is a very old friend. In my future restaurant, I would definitely incorporate more plant-based dishes.
The reason why is pretty simple: it is healthier! I’m not saying that I am against serving a burger, but definitely, most of the ingredients and dishes will be plant-based.
