Nutrition, Sustainability and Cooking - all connected

Nutrition is now playing an important role in society, and it is a crucial topic to be discussed for all culinary arts students, aspiring cooks, cooks and chefs. Cooking without any notion of nutrition is like driving a car without knowing any traffic laws. You can be a very creative and skilled cook, but if you do not know nutrients and nutrition, you might be considered a danger to others.

Mastering the ingredients and their nutrients are things that should be considered a key factor for every successful cook in the world. Every dish served should be compared to art. It is not only about design, colour, or taste. It is also about feeling and sensation. We, as cooks, should think about being more critic regarding what we eat and serve. It is all about our own health.

TOPICS THAT INTEREST ME

One of the topics in nutrition that interests me the most is “Balanced Menu” and, as a consequence, one of the topics that I would like to learn more about is “Recipe Makeovers”. A balanced dish is the result of a concept based on nutrients, ingredients, colour, taste and benefits for your body and environment.

It is becoming clearer week after week that Culinary Foundations, Nutrition and Sustainability are all connected. In the future, not only nutrition will play a more critical role in the culinary industry, but foundations and sustainability will also be determinant for the whole ecosystem and our own existence. The COVID-19 has shown us how fragile we are, and the only way for us to be stronger is through exercises and food.

According to Dr Norm Campbell, MD, professor at the University of Calgary, “High Blood Pressure” and “Dietary Risks” were responsible for 1 in 5 deaths worldwide in 2016. Both causes are attributed to genetic and food. We are talking about over 10 million deaths related to the excess of salt in our diet, the lack of potassium and overweight.

In the modern world, many authorities are discussing more and more about mental diseases related to social media, for instance. People are debating how Facebook can be detrimental to society. However, the discussion should also be focused on what the children are eating at school nowadays.

In the near future, nutrition will play a more important role in society in general, but currently, this topic is not being treated the way it should be. It is up to us, cooks, shaping this theme in the dishes we serve.
